The most common thing I use is probably an oscilloscope (like this one here https://www.amazon.com/KEYSIGHT-DSOX1102G-Oscilloscope-Analog-Channels/dp/B06XCC3LN4). It allows us to measure how voltages change with time, which can be helpful to check if a circuit is working as you’d expect.
In terms of equipment I’ve designed, the most interesting thing is a “cold atom gravimeter”. It uses quantum physics (which I don’t understand!) to measure gravity very very accurately. It’s currently only suitable for ground use, but as the technology develops it’ll hopefully be used in space to find underground water reserves and monitor sea level rises.
